Japanese Unagi Wholesaler Yamada Suisan’s first-ever collaboration with a Singapore Restaurant with the efforts from Nippon Airways Group (ANA). Maguro- Donya can procure premium unagi at wholesale prices, and offer cost savings to its customers.
So, what is so unique about Yamada Suisan eels breed?
Yamada Suisan breeds its own eels in clean and fresh underground water that goes to a depth of 70 metres. The wholesaler is also the first in Japan that does not use any chemicals such as antibiotics in its farm breeding, and so its batches of eels are healthy and safe to consume.
They also employ a 24-hour monitoring system to ensure that the eels thrive; perform checks on water quality as well as conditions from level to temperature. It also adheres to a precise feeding schedule so as to ensure that the eels are not overfed.
Enough of the information sharing, let’s move on to the unagi dishes that we tried:
Una Jyu S$35.80++
It comes with two pieces of unagi on top of the Hokkaido rice along with wasabi and pickled ginger. The set also includes a bowl of miso soup, salad, chawanmushi and dessert of the day.
Una Jyu Sashimi Set S$42.80++
It is the same set as Una Jyu but with additional tuna sashimi servings. This includes akami, chutoro and otoro in thick cuts served together with the meal.
Unagi Meshi S$28.80++
If you are an eggporn person, you can go for Unagi Meshi. It serves with slices of unagi with rice and topped with an onsen egg. The moment you poke the eggyolk, it just flows out beautifully. Mix them all together and you get the slimy texture which is quite satisfying for a meal.
The unagi here serves fresh, fleshy and well-coated with tinge of sweetness from the teriyaki sauce. So apart from tuna sashimi from Maguro-Donya, diners can check out the premium unagi offerings as well. And of course remember to enjoy it with the al dente Hokkaido rice directly from Japan..
