Chef Martin Foo is the freshly appointed Group Executive Chef of Crystal Jade Group. He has launched the 6-course set menu exclusively available at their flagship restaurant, Crystal Jade Palace to showcases traditional Chinese flavours with modern twists. The special menu is priced at S$98.00++/ per person for Jadeite Members Exclusive (U.P. S$128.00++/ per person for Public).And I was in treat because I attended the food tasting session last week.
Here are the dishes included in the 6-course menu:
Hokkaido sea urchin and ikura topped with egg white in crispy seaweed handroll
Black Truffle Foie Gras, Seafood with chicken & mountain yam broth
The double boiled soup packed with nourishing goodness and flavourful with ingredients used.
Grilled USDA beef short rib with Honey Char Siew Sauce
The beef short rib grilled to perfection in a honey char siew sauce served with spring onion and ginger mix and mustard sauce to complete the dish. Umami flavour indeed!
Pan-Seared Tiger King Prawn with XO Sauce, topped on Egg Noodles Tossed with Pork Lardons
The tiger prawn is beautifully plated with bouncy egg noodles texture. The pork lardons gives a far tastier taste to the noodles. It gives the salty flavour and pleasant crunch to the dish.
Chilled Fresh Mango, Grass Jelly, Kidney Beans Sago Pudding with Gula Melaka topped with Coconut Ice-cream
This is best to cleanse our palate after all the savoury items.
Surprise Dessert by Chef Martin Foo
We all went “wow” when it was presented. The cute carrots dim sum is filled with corn puree and the pears are filled with salted egg yolk glutinous bun. Interesting right?
