Hilton Singapore’s Opus Bar & Grill Restaurant located within a walking distance from Orchard MRT Station is offering new premium butcher’s cuts priced at S$128.00++ currently. I was invited for a dinner tasting session few days ago to try out the amazing treats.
So, what are the combination meats of the New Premium Butcher’s Cuts?
# 500-600gram Rangers Valley Angus OP rib
#150gram Margaret River wagyu flank steak with smoked chilli glaze
#400-500gram grain-fed beef short ribs with a marble score of three, braised with aromatic spices
#Open-flame Jarrah Wood Charcoal Grilled Gourmet Sausages

Out of the cuts, my favourite is the beef short ribs. It has the juicy and meaty flavour. The special marinate with different sauces for hours and grilled with high heat gives a pleasant texture to it. The Angus OP Ribs is beautifully marbled and I simply enjoyed it without any sauces. And if you prefer stronger flavour, try the wagyu flank steak with smoked chilli glaze. It has lot of tough fibres running through it and best to enjoy it with thinly sliced for more tenderness. It can be pretty tough in texture as compared with other cuts.
Next, Wagyu Sirloin & Lobster S$138.00++
500g Australian Westholme wagyu sirloin served with +500g whole live MSC Boston Lobster. Chef uses Australian Westholme wagyu sirloin as the brand has the combination of genetics, nutrition and consistency in eating quality. A delightful marriage of succulent flavours of wagyu sirloin and sweet taste of lobster meats I would say. Diners can request on the doneness of the wagyu sirloin.
1-1.2kg U.S. whiskey-aged Tomahawk 365days grain-fed S$153.00++
Indulge in 365-day grain-fed Tomahawk steak wrapped in a bourbon whiskey-soaked cloth and dry-aged in a custom-made Himalayan salt tile cabinet for up to 21 days. The liquor enhances the rich depth flavour of the meat and tenderizing it along the way. Everyone went “wow” when the chef did the flaming performance upon serving on the table. And of course do request your meat doneness preference to the staff to enjoy it to the max. I would prefer it to be medium rare but some of us preferred it medium well though.
