Welcoming the bountiful Year of the Rat 2020 at Michelin-Starred Jiang-Nan Chun , Four Seasons Singapore Hotel with specially crafted menus for this festive feasting. Indulge in exquisite dining with celebratory menus, crafted by Executive Chinese Chef Tim Lam. The Chinese New Year Festive Dining Menus with the concept of ‘Xiang Le Zhu Yi’ are available from 6 January to 8 February 2020. It is available from S$158.00++ , S$188.00++ and S$238.00++ per pax for 6 courses, and range from S$1158.00++ per table of 8 pax to S$6,888.00++ per table of 10 pax for 8 courses.

Abundance Abalone, Lobster and Salmon Yu Sheng

Yu Sheng is a must-have dishes for this celebratory festive with premium ingredients like lobster, abalone complemented by hand-shredded seasonal vegetables, healthy crunch including pumpkin seeds, melon seeds and sunflower seeds, and homemade condiments and sauces. With all these ingredients in, it gives a good mix of soft, crunchy, sweet flavours.

Double-boiled Bird’s Nest Soup with Whole Dried Scallops and Sea Whelk

Comforting and nourishing double-boiled bird’s nest soup with pleasantly chewy mouthful sea whelk. The soup helps to stimulate the appetite and improve digestion. Overall, it is good for health.

Deep-fried Prawns with Sliced Almond and Crispy Rice and Deep-fried Prawns with Wasabi Dressing


Steamed Star Garoupa with Superior Soy Sauce

Cantonese-style steamed star garoupa which has superior in texture and seasoned soy sauce adds a bit of sweet and savoury umami to the dish.




Jiang-Nan Chun Signature Roasted Duck

Never go wrong with the signature succulent duck meat that boasts an aromatic smoky flavour. We love it!

Braised Six Head Abalone and Shiitake Mushrooms with Seasonal Vegetables and Black Moss

Another must-have dish during Chinese New Year is this abalone dish cooked to folk tender and savoury braising sauce. And of course the strands of black moss add texture to the dish.

Stir-fried Glutinous Rice with Preserved Sausages

Long-standing classic dish in Chinese restaurant full flavours from the preserved sausages. Fragrant glutinous rice and it was indeed a satisfying bowl of goodness.

Chilled Coral Seaweed with Peach Resin

Lastly, we ended with refreshing chilled coral seaweed with peach resin that achieve better digestive system.
