La Dame de Pic Raffles Singapore located at Raffles Hotel Singapore is three-Michelin-starred French chef Annie-Sophie Pic’s debut into Asia. The restaurant is accessible via the hotel’s grand lobby. The Singapore outlet of La Dame de Pic is currently helmed by new Chef Francesco di Marzio who has worked with Chef Pic for years before coming to Singapore in early 2021 and Justin Wee, Chef Sommelier to recommend beverage pairings catered to guests’ preferences.
The restaurant offers a couple of set menus, and they start from S$128.00++ per pax onwards for lunch. Wine and sake pairing is available from S$158.00++ per pax. We were here on a Saturday afternoon for Experience Lunch Menu priced at S$246.00++ recently. The menu is not available on Friday, Saturday and Sunday (exclude public holidays).
Kickstart with a breadbasket that comes with three kinds of bread and exquisitely prepared small bites with surprising elements in each dish.Visually stunning and a good start of the meal.
Moving on is Amela Tomato. Full-bodied rich and sweet taste of Amela tomato with smoked burrato inside along with chou chao and mint sauce vierge. A perfect summer ingredient exquisitely imbued with aromatics using a special marination technique. Splendid!
Berlingots -the iconic mainstays in dish in La Dame de Pic’s menu. The pasta parcels full of colour and flavour in the spirit of Singapore flavours “Laksa” and herbs coulis from the garden. The little dumplings filled with French cheese fondue burst open as I took the bite along with the hints of laksa flavors.
Next, Amadai from Yamaguchi accompanied with lettuce, pine buds and capers leaves, yellow wine “Beurre Blanc” and trout roe. Look at how beautiful the crisp edible scales of the Amadai and the “ Beurre Blanc” complements the fish well with its slightly sweet, slightly tangy taste with underlying richness.
Pigeon from Bresse is heightened with chrysanthemum and chamomile served along with baby eggplant and black garlic. The dish is suggested to cook medium-rare and the flesh is perfectly tender and tasty. The pigeon itself is surprisingly gamey so with the accompanied of other ingredients to balance off with flavour.
Then, we had Comte (French cheese) and Hibiscus followed by refreshing palate cleanser before the dessert.
There are at few choices for desserts, and I decided to try their signature White Mille Feuille. Presented in a white cube in the middle, I was wondering is the mille feuille? It turns out that you need to cut it open for the well-defined mille feuille layers. Surprise! Layers of crispiness with confit grapefruit and litsea cubeba emulsion. There is also a taste of ginger flower mixed with cream on the outer cream base along with the cloud like ginger bourbon and berry foam.
Lastly, petit fours and your choice of tea and coffee.
