Honey-Soy-Smoked Patin Fish with Osmanthus
Layered Pork Ear with Vinegar Pearl
Crispy Duck served with Black Pepper Orange Sauce
For appetizers, we had honey-soy-smoked Patin fish with osmanthus, layered pork ear with vinegar pearl and crispy duck served with black pepper orange sauce.
Double-boiled Sea Cucumber, Sarcadon Asparatus Dried Mushroom and Sea Conch
Nourishing broth with great ingredients like sea cucumber, Sarcadon Asparatus dried mushroom and sea conch. It has the delicacy and nutritional values from the dried mushroom and a hint of salty marine-ness from sea conch.
Braised 10-Head South African Abalone with Fa Choy Black Moss, Fish Maw & Lettuce
Classic high-roller dish made from premium ingredients with guaranteed of exquisite and fine flavours. The braised 10-head South African abalone is served with Fa Choy Black Moss, a homonym for “gaining wealth” along with fish maw and lettuce.
Steamed Cod Fillet with Spicy Hainan Yellow Pepper
Classic steamed fish served with spicy Hainan yellow pepper that looks like a little pumpkin- bright yellow orange. It is very tasty with a passionfruit-like flavour and considered one of the hottest chillies in the world. But thankfully the spicy level here is acceptable for me and complements the silky, mild flavour of the cod fish.
Braised Pork Knuckles served with Mantou
Mantou is a classic accompaniment for braised pork knuckles most of the times. The braised pork knuckles that symbolize “forwardness” brings prosperity, progress, and lots of good luck in the new year. The meat is tender and soft and best to enjoy with the steaming mantou.
Steamed Jasmine Rice & Millet with Pickle Long Bean & Preserved Meat
Next, steamed Jasmine rice and millet with pickled long bean and preserved meat served individually.
Chilled Highland Lotus Seed with Yunnan Rose Sugar & Nostoc Pearls Soup
Butterfly Pea & Melaka Coconut Sugar “Nian Gao”
Deep-fried Pumpkin Glutinous Rice Dumpling stuffed with Red Bean paste
Lastly, we had desserts to mark the sweet ending note for our dinner.
