Hilton Singapore Orchard is the newly opened hotel located in Orchard Road. We are here to check out the hotel’s residential all-day dining restaurant, Estate. The restaurant is inspired by the heritage of Orchard Road’s early years took over the space of previous Triple Three, Mandarin Orchard. Also, this all-day dining buffet restaurant showcases culinary experiences and flavours from around the world are led by Director of Culinary Vijayakant Shanmugam.
The space of Estate is conceptualized by award-winning global hospitality design firm EDG Design. It has the colonial-style inspired by the humble origins of Orchard Road which used to be filled with fruit orchards and nutmeg plantations. There are various dining sections carved out for better dining privacy. Not to mention that they use neutral colour tones from the walls to the wooden chairs and colonial-style floor tiles.
As we are moving to the endemic phases, diners can now walk around the buffet stations to visually see the buffet spreads and choose from there. Then, there will be staff assisting to pick the dishes for you.
First up is the Raw & Seafood Kitchen and Salad Bar. Kickstart with cold cut appetizer station where you can get Coppa Ham, Salami, Air-dried Beef, and Prosciutto de Parma.Salad Bar includes selected greens of the day where you can DIY your own salad. Cheese selection is available but limited choices. There is also Seafood on Ice where diners can get fresh seafood selection like Oysters, Tiger Prawns, Black Mussels, Clams and Scallops in Shell.
Do not miss the Grill Kitchen where you get the Asian-inspired skewers of meat cuts and vegetables. All are marinated with special homemade rubs. We tried some of the highlights include Wagyu Beef Kofta, Roasted Garlic Potato, Black Miso Chicken. Others include Kurobuta Pork Teriyaki with Spring Onion, Beef Kebab and Aubergine Satay.
Moving on is the Wok, Fry & Premium Kitchen showcasing signatures like Estate Black Truffle Roasted Duck. I tried it once during their media preview few months back and it was delicious.The meat is tender and flavourful and it is served with a drizzle of truffle plum sauce and soy honey glaze. Signature dishes like Sichuan-style Spicy Chicken “La Zhi Ji’, Honey Soy-glazed Australia Short Rib, Steamed Fish with Green Chilli, Black Bean and Bamboo Leaf and many more. Asian delicacies like Nasi Goreng Kampung with Silver Fish with Homemade Chili, Singapore XO Hokkien Mee, Carrot Cake with Chinese Sausage and Steamed Sticky Glutinous Rice with Chinese Sausage are available too.
For carbs lovers, check out the Noodle & Wrap Kitchen. You Hand-crafted noodles are paired with aromatic broth or contemporary-styled Asian and Western choices. Highlights include Cantonese-style Wagyu Beef Noodles and Squid Ink Homemade Gluten-Free Tagliatelle with Octopus Confit. Look out for Gochujang Chicken Taco as well. The Cantonese Style Wagyu Beef Noodle is definitely my top favourite of all dishes. The aromatic and non-oily broth was flavouful and the noodles cooked in al dente. The wagyu beef meat texture and taste are on point.
Dim Sum selections like Chicken ‘Char Siew’ Pau, Chicken ‘Siew Mai’, Seafood Gyoza and Crystal Dumpling are showcase as well.
Lastly, Dessert station where diners get to indulge in sweet treats like Spiced Caramelized Pineapple, Torched Citron Tart, Rum & Hazelnut Pate Choux, Marsala Wine Tiramisu, Champagne Raspberry Gelée, Arabica Latte Mille-Feuille, Mango Infused Jasmine Gateaux, Hilton Signature Cheesecake Forêt Noire, Kueh Lapis and Assorted Local Kuehs. There is also a selection of fresh and whole fruits too.
And if you realize by now that there are no sashimi and Japanese dishes served here as of now. Nevertheless, we still left with happy belly. We get to try all kinds of cuisines here and some local favourites too. The desserts are way too pretty and delicate. Kudos to the talented Pastry Chef Cindy Khoo.
