Golden Harvest Sea Cucumber Yu Sheng – S$208 for L | S$148 for S
For All Fine Dining Restaurants

Crystal Jade Yu Sheng
For this year’s rendition on the savoury ‘Shunde’-style yusheng comprises of crunchy frisee lettuce, cucumber, ice plant, kaffir leaves, onions, carrots, jellyfish head, pomelo, dried permission, red capsicum, that dot the wholesome combination with a vibrant touch of colour. The roasted peanuts and cashews impart additional texture and fragrance. Instead of raw fish, they incorporated tender slices of Australian sea cucumber followed by a toss of superior soy sauce-based dressing with aromatic shallot oil and a tinge of sweetness to the yusheng. It is simply light, refreshing and extremely appetizing.

Tasty and well-executed dish I would say. The combination with the pickled tomato soup is simply brilliant.
