Newsletter: “8 Hands” Dinner with Japanese Pastry Guest Chef, Emily Mori

The team at My Little Spanish Place is all set to welcome Japanese Pastry Chef Emily Mori from Tokyo, Japan for their first guest chef dinner at their third outlet, My Little Spanish Place Boat Quay. The One-Day event on 8 October (Thursday) offers a 4-course dinner that includes a dessert platter with 6 types of desserts created by two pastry chefs. The dinner is priced at S$78++ per head.The “8 Hands” dinner will feature chef-partners Edward Esmero and Maria Sevillano. It will also debut Pastry Chef Karyn Chung, who just joined the team and will collaborate with Chef Emily Mori on the dessert platter.My Little Spanish Place

What you can expect on the night?

Main Courses

Chefs Edward and Maria have created dishes such as Pan Roasted Scallops with Aritchokes and Chrorizo Salsa, paired with Mojo Verde, a sauce known as the pesto of the Canary Islands. Other dishes include Braised Beef Short Ribs with Smoked Potato Puree and Crispy Parsnip and Asparagus Soup with Jamon and Salmon Roe.

Desserts

The dinner will follow by a dessert platter that will represent 2 distinctive styles of desserts. Chef Karyn Chung, who worked at 2am:dessertbar and 2am:lab for four years, has rolled out Spanish desserts with her twist. For the Flan de Queso, she added coconut to the classic cream cheese filling and included new additions such as Pedro Ximenez reduction and cinnamon roasted almonds. The Leche Frita, another traditional Spanish sweet, has been transformed with Soy Milk fried with Crispy Wanton skins and Honey Balsamic Vinegar. She also added an original on her own- a chocolate dessert of various textures-Cocoa Mouse, Dehydrated Cocoa Sponge, Chocolate Soil and Salted Caramel.

Chef Emily Mori combined Japanese flavours with ingredients often used in Spanish cuisine for this dinner. She shares, “ You can find crunchy, soft, melt-in-your-mouth, chewy, velvety, tangy, sweet, slightly bitter and salty in the desserts that I have prepared.” Her repertoire includes Coffee infused milk with Buckwheat Tea Sauce, Tomato and Cherry Flavoured Gazpacho with Japanese Sake Flavoured Soft Mochi and lastly Little Spanish Almond Cakes with Yuzu Cream, Yuzu Confiture and Yuzu Miso, topped with Manchego Cheese.
