Four Seasons Hotel Singapore has teamed up with Candlenut, the world’s first Michelin-starred Peranakan restaurant to launch a specially crafted Peranakan Afternoon Tea at One-Ninety Bar. This limited time collaboration is available all weekends of April and end June 2021.Candlenut Chef-Owner Malcom Lee presents a sophisticated menu of Straits-Chinese dishes with a refined take and yet presence the essence of the traditional Peranakan cuisine. We also have the hotel’s executive pastry chef, Chef Audrey Yee to present the freshly-baked scones with new flavours for this afternoon tea.

Peranakan Afternoon Tea Four Seasons and Candlenut-Roti Jala
For this Peranakan Afternoon Tea, indulge in the savouries like kueh pie tee, pang sushi (sweet potato buns), roti jala and otah toast. The roti jala is made using coconut crepe and served with Chef Lee’s mum’s signature chicken curry. I personally enjoyed the thick, creamy chicken curry very much. It is such a comforting dish to savour all times.

As for the sweets, the afternoon tea includes kaya and butter toast, kueh salat, kueh bingkah ,buah keluak tart ,lemongrass cake and more. Each desserts are made refined and so much details put into each single piece. The decadent buah keluak and valrhona chocolart tart is tad unique and rich in flavours. The kaya and butter toast is quite interesting with the crunchy toast, SCS butter, rich homemade Kaya and a dusting of Lam Yeo coffee powder. Taste as good as it looks.

Not forgetting the popular freshly-baked vanilla and pandan scones served with homemade pineapple-gula melaka jam, strawberry-rose preserve and Devonshire clotted cream. Chef Audrey’s scones are my all-time favourite.

Complete your afternoon tea with innovative local-inspired cocktails by bar manager, Gabriel Carlos. Cocktails include Kopi-O ( coffee-infused Mancino vermouth, 12-year Auchentoshan Scotch whisky and house cherry liquer), Pandan Kueh (combination of pandan and coconut, infused with nuances of lychee and chamomile, clarified milk punch and Altos tequila) and Kampung Fizz (inspired by the native butterfly pea plat with unique floral and citrusy-gin-based cocktail).

Or Candlenut Signature Tea Blend, a medley of oolong and butterfly pea flower with fragrant notes of jasmine and Panda. Other tea selections including speciality Monogram teas or Lavazza coffee are available for your pick.
