Pool Grill at Singapore Marriott Tang Plaza Hotel has recently launched “All About White Asparagus” menu for this spring season. So, what is the difference between the white asaparagus and the green asparagus? White asparagus comes from the process of etiolation, which is the deprivation of light. The plant cannot produce chlorophyll without light and thus there is no green colour to the stalks. With this mellow flavour asparagus, Matthew Van De Zwan, Executive Chef of Singapore Marriott Tang Plaza Hotel has created the tantalizing ala- carte to tantalise the palates of diners. Buttered White Asparagus with poached egg and hollandaise sauce S$20.00++
Elegant plating with the poached egg nicely placed on top of the white asparagus gives a nice touch on visual pleasure. As we poke the egg yolk, it flows right to the savoury buttered asparagus. Yummy!

White Asparagus Soup with seared scallop and avruga caviar as topping S$26.00++
The soup was a crowd pleaser that night with light yet hearty taste. I enjoyed it especially with the seared scallop and caviar as a whole.





Grilled white asparagus salad with figs and arugula S$22.00++
It was a refreshing take for this dish with mild flavour from the white asparagus, sweetness from the figs and healthy greens.

MAINS
Pan-fried sea bass with white asparagus, clams, mussel chowder S$36.00+
The chowder taste was on point with the seafood sweetness in it and the sea bass was perfectly pan-fried. I will order the rich flavour of the chowder as its own if there is in the menu list.

Lobster Ravioli, langoustine, white asparagus and squid ink sauce S$48.00++
Elegantly plated on the white plating with detailing of the ingredients was an eye-catching sight for me. The lobster ravioli was flavourful in texture and the white asparagus was soft and fibrous in texture. And of course the squid ink sauce added in the final touch of the dish.

Gratinated Beef Tenderloin buttered white asparagus; porcini crust and truffle sauce S$72.00++
Tender and juicy beef tenderloin with the porcini crust topping was just perfect for me. While the buttered white asparagus gives a mild flavour, it compliments one another. It would be good if the truffle sauce portion could be more though.

DESSERTS
Strawberry Romanoff
Lastly, keep some space for dessert to end your meal. We had the Strawberry Romanoff which was a light dessert to cleanse our palate. With bits of fruity, sugary and alcohol content, it is good to enjoy it without feeling much guiltiness.
