Saboten has expanded to third outlet located at 100AM mall which is a walking distance from Tanjong Pagar MRT Station. I remember my first visit was during their opening at Millenia Walk sometime back. The restaurant imports fresh grain-fed pork to ensure its cutlets are juicy and succulent and their breadcrumbs which are specially imported from Japan.

One of the highlight is the Mangalitsa Katsu. Native to Hungary, the mangalica is a rare pig with a rich marbling. It is my first time trying it out and learnt about this. We are aware that beef has marbling but not pork. So, this is pretty interesting. The texture resembles that of beef, and like kobe beef it has a perfect balance of red meat and fat. It is a source of vitamins, minerals, thiamine, riboflavin, zinc and iron, making it a nutritious meal to enjoy.

Here are the highlight from the four seasons:
Spring: Abalone Katsu & Ebi Fry

Chilean abalone from the coast of southern Chile coated with breadcrumbs is chewy and thick. Juicy fried shrimp with airy flakes is definitely not to miss.

Summer: Mangalitsa Loin & Ebi Katsu

Fall: Hotate Fry & Oyster Fry

Huge size scallop coated with bread crumbs and fresh yummy oyster that I wish to have more than one serving.

Winter (Dessert): Yuzu Sorbet
Light and refreshing dessert to complete the meal. Too bad I didn’t take a picture of it.

All sets are complete with chawanmushi, pickles and refills of crunchy cabbage, Japan-imported rice and miso soup. The crunchy golden crust and yet retains the moisture of the ingredients within it are nicely done. And the best part is the crunchy cabbage drizzle with sesame sauce definitely goes well with the rice.
