[SG EVENT] Soba Making Class with Chef Yoshinori Shibazaki from Shimbasi Soba
I spent my Saturday attending soba making class with Chef Yoshinori Shibazaki from Shimbasi Soba. We had the class at RE&S Enterprises Pte Ltd building located at Tai Seng Street.
Before I share about the workshop I went, allow me to share story about Chef Yoshinori Shibazaki.
The 65-year-old Soba Master Chef Mentor Yoshinori Shibazaki has over 40 years of experience making soba in Australia, Japan and Singapore. Besides holding the title of “Professional Chef” conferred by Japan’s Health, Labour and Welfare Minister, Chef Yoshi was also awarded the title of “Specialist Noodle Chef” – a rare honour within the Japanese soba industry.
In 2003, Chef Yoshi came to Singapore to supervise the opening of the award-winning Shimbashi Soba restaurant in Paragon Shopping Centre. In 2016, he officially joined RE&S Enterprises as a Soba Master Chef Mentor. This year, he will be involved with the opening of the long-awaited second outlet of Shimbashi Soba in Great World City.
Chef Yoshi’s illustrious career and his unwavering passion towards soba have seen him featured as one of the characters in Japan’s long-running popular gourmet manga “Oishinbo”. He has even authored his own book titled “Soba So Good”, which is available on retail for $12 in the restaurant. In the book, he shares many personal tips on making soba, as well as recipes for home cooks to follow. Even following retirement, Chef Yoshi wishes to continue doing what he loves – working with soba.
Our workshop started with live demonstration by Chef Yoshi. He shows us step by step on the process which I did a summary video below.

After the demonstration is done, we are given a work station to make our own soba. It is an interesting and enriching class where I get to hands on and make my very own handmade soba from scratch.

With the help from soba masters, here is my final result. Although it looks like ‘meepok’ , its my very own soba! The steps are pretty straightforward and it takes years of experience to master the skill.
