[SG EATS] Sinfonia Ristorante – Contemporary Italian Cuisine At Victoria Concert Hall Singapore
Sinfonia Ristorante is formerly known as FOO’D By Davide Oldani is situated at Victoria Concert Hall. Sinfonia Ristorante, which means “symphony” in Italian represents the brand-new creations by Chef Simone Depalmas who has over 21 years of experience under his belt. Chef Simone was previously with Alkaff Mansion Ristorante.
I was invited with fellow foodies to check out chef’s new menu creativity the other night. Let’s move on to the dishes we tried:
Complimentary bread is served.
Truffle Chicken Liver Brulee
Amazing appetizer to kick start the night. It is an innovative way of savoring chicken liver pate. It has the modest amount of sugar crust’s sweetness and the pate was smooth, rich and firm. Spread it over the roasted focaccia was amazingly divine. The whole plate was wiped clean.
Sea Urchin, Alaskan King Crab, Rice Roll, Salmon Roe & Foam
Beautifully plated rice roll topped with Hokkaido sea urchin and clam foam, chilli crab made with Alaskan king crab, tomato crumble and salmon roe wrapped in seaweed. What more to ask for with such splendid ingredients on the plate?
Roasted Mediterranean Octopus
Roasted octopus served with a slice of round watermelon below, dill and leek.
Mushroom Soup
The mushroom soup served with Umbrian truffle and crystallised pinenuts. It was thick, rich and creamy in taste.
Handmade Squid Ink Tagliolini
Tagliolini pasta is somewhat thicker than spaghetti is popular pasta in Italian regions. This is freshly made daily with real squid ink and complement with Mediterranean king prawn, tarragon and bottarga (cured fish roe). Tarragon adds distinctive flavours to the pasta.
Risotto
Risotto prepared with porcini (wild mushroom), truffle and thyme.
Frog Leg
I was quite impressed with this dish. This is my first time trying frog leg in the style of Italian tempura. Crispy and airy exterior French frog legs served with sour sauce which is made of milk, vinegar and lemon. I wouldn’t mind having more than one.
Beef Short Ribs
Sweet and savoury beef short ribs were slow-cooked for 12 hours along with salmon roe, horseradish and chestnut. Thus, this explains that the beef be kind of funky. The meat was amazingly tender and flavourful.
Three-style Roasted Cabbage
Seasoned cabbage with seasonal herbs and enlivened with sour cream. The roasted cabbage takes on a sweet and buttery flavour. The combination of taste and texture was just fantastic.
The Mandarin
Exquisite replica of the mandarin orange topped with chocolate crumble and the inside is filled with mascarpone cheese and fresh orange juice. Citrusy and sweetness taste for this.
Passion fruit, Raspberry Meringue and Rose Lychee Sorbet
You can opt for this refreshing dessert to end our beautiful night. It was my favourite palate cleanser.
The dishes here are rather interesting with beautiful platings that give a visual pleasure as well. Each dish is creatively curate by Chef Simone and it was indeed a pleasure dining experience here. I thought it is a steal if you drop by for their dining specials promotion given such cosy and romantic ambience to dine with your loved ones.
