[SG EATS] LUCE by Davide Giacomelli- A NEW Italian Restaurant at InterContinental Singapore

LUCE by Davide Giacomelli, a brand new Italian concept restaurant taking over Ash & Elm space is opening on 20th May 2022 at InterContinental Singapore. LUCE refers to ‘light’ in Italian shine a spotlight on fresh, local ingredients, with a seasonal a la carte menu that will be refreshed every quarter. The restaurant is helmed by Chef de Cuisine Davide Giacomelli who boasts over 13 years of culinary experience, including at several Michelin-starred restaurants across Europe. The Italian native has experience under the tutelage of multiple Michelin-starred chefs and pays homage to his earliest love affair—the sight, scent and flavors of classic Italian cooking at his father’s restaurant in the quaint town of Sirmione, ‘the pearl’ of Lake Garda. Davide is joined by Artem Viglione, who will serve as Restaurant Manager. Artem has a lot of experience in the food and beverage industry. He has worked in Italy, the United Kingdom, Australia, and Singapore in different roles at restaurants like iO Italian Osteria Restaurant, LAVO Restaurant at Marina Bay Sands, and Da Paolo Restaurant & Bar at Dempsey.
We are delighted to be invited for the 4-course preview dinner before their official launch. Let me bring you through the dishes we tried the other night.
BruschettaLUCE by Davide Giacomelli-Bruschetta
We try this much-loved classic Italian starter, Bruschetta. Toasted crisp surface bread grated with garlic and topped with Parma ham, buffalo mozzarella, cherry tomato concasse, rocket leaves and basil.
Wine Pairing: Pizzolato, Prosecco Superior Valdobbiadene Brut DOCG (Organic)

Acquerello LobsterMy favourite of the night is this Acquerello Lobster dish. Chef uses carnaroli rice cooked in lobster stock with half Boston lobster and chervil. Carnaroli is the preferred risotto rice in most regions of Italy and has the creamy and rich yet toothsome texture. It also had a distinctive lobster flavour without being overwhelmingly fishly. Splendid indeed!
Wine Pairing: Chateau Sainte Beatrice, Cuvee Des Princes-IGP Mediterranee

Merluzzo alla PuttanescaLUCE by Davide Giacomelli- Merluzzo alla Puttanesca-Pan fried cod
Pan-fried Alantic Cod with fresh homemade tomato sauce, taggiasca olives, anchovies, pantelleria capers and fresh herbs. A combination of savory and sweet, spicy, and bold flavours in it.
Wine Pairing: Zenato, Lugana San Benedetto DOC

LUCE-misuLUCE by Davide Giacomelli- LUCE-misu dessert
Our dinner ended with a sweet note, tiramisu dessert. Mascarpone cream espuma, espresso syrup, lady finger sponge and crunchy feuilletine is a rich treat with bold flavours of cocoa and espresso. We are impressed with the presentation as well as the portion too.
Wine Pairing:Bava Moscato D’Asti DOCG
