Savour the delicate sweetness of this sustainably sourced Boston lobster, which is first poached to perfection before being separated into tender chunks, drenched in creamy béchamel sauce then stuffed back into its shell and topped with Manchego cheese. This glorious crustacean is served on a bed of seafood paella featuring bomba rice cooked together with seafood stock and sofrito – combining onions, red peppers, tomatoes, and pimiento chillies.

This free-range turkey from France is submerged into a brine solution for 48 hours, comprising of salt and winter spices such as cinnamon, clove, star anise and more. Thereafter, it is glazed with Bourbon and orange marmalade, slow roasted till golden-brown on low temperature for about three hours. This explains the how juicy, moist, and flavourful the turkey is encased within a lovely crispy skin that boasts a hint of smokiness. The stuffing served on the side is a mixture of seasoned bread, apricot and pistachio that cuts through the savouriness that makes a wonderful accompaniment to the turkey. This is ideal to share with family and friends.
