The St. Regis Singapore presents The Astor Grill, a pop-up restaurant founded on the original shophouses set in early century New York, inspired by St. Regis legacy and rituals. The Astor Grill celebrates two essential aspects; artisan produce by premium suppliers and bespoke dining experiences from the traditions of the House of Astor. Indulge in the gastronomy dining experience as the pop-up restaurant will takes over the space of French fine-dining restaurant Brasserie Les Saveurs. This exquisite experience will be available for a la carte lunch and dinner with an accessible three-course lunch S$48.00++ per pax.

Sharing some of the dishes from the menu we tried during our dinner session. We started off with an assorted breadbasket that consists of curry leaves, sourdough, and seaweed flavour that paired with premium extra virgin olive oil.
A welcoming Amuse Bouche, grilled sourdough topped with tomato and Iberico ham.
Appetisers
Grilled King Prawn
Grilled tiger prawn paired with beef heart tomatoes, peaches, avocado, dressed in mint and basil for a harmonious balance of fruity and herbaceous.
King Crab Salad
Refreshing and sweet king crab salad consists of celeriac remoulade, avocado, paprika mayo seasoned to taste.
Traditional Beef Tartare
Raw and chilled beef tartare with soft egg yolk drizzled in anchovy oil. Raw beef is quite mild and has almost no scent to it and goes well with toasted baguette.
Grilled Whole Turbot – 2kg
If you are coming with a group of friends, try their 2kg grilled whole turbot grilled delicately, and tableside ceremony unveiling the pearly-white succulent flesh with sides as accompaniments. The fish has a sweet, yet mild flavour to it but can be a little fishier but this has no fishy taste at all.
The Astor Grill selects a collection of heritage breeds of beef from farms around the world, for an unparalleled level of meat quality and taste. Showcasing cuts from America and Australia-US Harris Ranch Angus Prime, USDA-certified and one of the longest standing premium Angus brands in the USA. There is also Satsuma Gyu presentation- created by a small group of 12 master Wagyu farmers in the Kagoshima Prefecture with their cattle’s 600-days grain-fed diet of nutritious rice plants cultivated on the slope of Mt. Aso.
Artisanal Cuts
We had the Striploin Japan Full Blood Wagyu A5 500 Days Grain Fed 200g and Bavette Australia Angus 200 Days Barley Fed 200g. Luxurious and indulgent beef especially the buttery and melt-in-your-mouth flavor. that is characterized by its intense marbling and buttery, melt-in-your-mouth flavor.
Each steak is served with Chef’s Specialty Sauce, and a choice of one additional sauce from either Chimichurri, Bordelaise or Bearnaise.
Oven Roasted Rack of Lamb
I am a fan of lamb and their oven roasted lamb is grass-finished, which gives lamb its unique flavor. It is grassy, well-balanced, robust in flavour.
Tomahawk Australia Angus Grass Fed 1.4kg – Signature Sharing Cut
Tomahawk is known for its rich, buttery flavour and tender texture. In various butcher cuts, the ribeye delivers mouth-watering, juiciness, and taste in every bite. The tomahawk is carved from the beef rib in the same primal section as any other ribeye. They served Australian beef, which is herbier in taste, earthy and beefy in flavour. I enjoyed it on its own and further elevated with the sauces. Sides like buttery mashed potatoes, seared baby romaine, grain mustard vinaigrette, creamy spinach and many more are available in the menu.
Dessert
Astor Grill Tiramisu
Each bite of the tiramisu filled with slightly sweet yet light, delicate, and soft espresso-soaked ladyfingers along with coffee gelato and crispy gold crumbs.
Chocolate Mi-Cuit
Goey, rich fondant cake served with Tahitian vanilla gelato and Hazelnut sable. My favourite dessert of the night.
Sticky Toffee Pudding
Sticky toffee pudding served along with vanilla gelato and honeycomb. The dessert is dense, moist and has just the nice amount of sweetness to it. Nice!
Lemon Tart
Lemon tart served with lemon cream, almond sable, and yuzu coulis. Every mouthful offers an explosion of tangy citrus flavour.
Complete the bespoke dining experience, enjoy it with wine pairing. There are also exclusive cuts that will be featured monthly for added variety. So, don’t miss the chance!
