Choose from a variety of dine-in Set Menus starting from S$108++ per person, featuring elevated modern Cantonese dishes with premium ingredients like Giant Grouper and Australian Lobster. The A La Carte Creations showcase the chef’s expertise and creativity.

Experience a specially curated Lunar New Year edition of the signature Dim Sum, Drink Sum Brunch, featuring seasonal delicacies and new-to-menu cocktails. Additionally, take home the flavors of Madame Fan with the Take-home Culinary Creations, including the popular Prosperity Poon Choi (starting from S$438nett) and signature sauces (starting from S$28nett).

An artistic and luxurious prosperity toss featuring Australian Lobster and a vibrant ensemble of ingredients like homemade bak kwa, crispy lotus root, longan, green mango, pomegranate, guava, apple, mango and grapefruit. The signature dish is served with a refreshing Honey Grain Mustard Yuzu Yogurt Dressing and topped with Gold Flakes. Madame Fan’s Bountiful Blessings Lobster Yu Sheng S$238++ serves 8 persons in celebration of the Year of the Dragon, available exclusively for dine-in only.

Prosperity Poon Choi from S$438nett for five persons featuring luxurious ingredients such as Abalone, Sea Cucumber, Scallop, Tiger Prawn simmered with premium yam in homemade abalone broth and slow cooked over four hours. The indulgence is further elevated with a Roasted Pork Knuckle stewed in this flavourful pot.
Madame Fan Prosperity Poon Choi
Complete the celebration with the Prosperity Poon Choi Bundle (S$698nett per set for six persons) inclusive of Abalone Yu Sheng, Wok Fried Glutinous Rice with Preserved Sausage, Dried Shrimp and Yam as well as Pan Fried Nian Gao with Coconut Crumb.

Imperial Bird’s Nest Golden BrothMadame Fan JW Marriott- Imperial Bird Nest Golden Broth
Harmonious blend of savory, umami, and slightly sweet notes, with a luxurious and velvety texture from the bird’s nest. The crab meat contributes to seafood richness, and the roe adds bursts of flavor. Love it!

Braised Giant Grouper
Madame Fan JW Marriott-Braised Giant Grouper
Cantonese-style braised giant grouper with beancurd fupi and chu hou sauce. Moist and sweet grouper with enhanced flavours from the sauce.

For a delectable experience, we had the Stewed Seafood Beancurd Rice. The rice absorbs the savory essence of the stew, becoming a flavorful base that ties the dish together. Caviar added a luxurious element to the dish.. This results in a harmonious blend of seafood goodness, silky beancurd, and aromatic rice.
Madame Fan JW Marriott-Mango Fountain Chiffon Cake
We ended the dinner with Lunar New Year dessert- Mango Fountain Chiffon Cake with Australian finger lime. Available in a la carte menu priced at S$22++ per portion.

Lavish dining set menus and a la carte creations are available from 15 January to 25 February 2024. The Lunar New Year edition of Dim Sum, Drink Sum Brunch is available from 10 to 12 February, 17 to 18 February and 24 to 25 February 2024.
