[SG EATS] Seroja At Duo Galleria, Bugis | Michelin Green Star Malay Archipelago Fine-Dining Cuisine By Ex-Head Chef Of Meta

Seroja restaurant, situated at Duo Galleria in Bugis, achieved its inaugural Michelin star a few months ago, earning the distinction of being Singapore’s first Green Star restaurant. Led by Chef Kevin Wong, formerly the Head Chef of Meta Restaurant Singapore, Seroja opened its doors in 2022, dedicated to expressing Chef Kevin’s love for the Malay Archipelago. The restaurant pays homage to Malaysian culinary traditions by incorporating local produce, spices, and techniques into its menus. The name “Seroja” translates to lotus flower in Malay and also happens to be the street name of Chef Kevin Wong’s family home in Klang.

After making a reservation two months in advance, we finally had the opportunity to experience Seroja on a Saturday lunch. Opting for the Kuntum Menu at S$218.00++ per person, we complemented our meal with a shared bottle of red wine. For those inclined towards dinner, the Nusantara Menu is available at S$268.00++ per person.

The Kuntum Menu commenced with a delightful trio of snacks, including Tiram (Beef Tartare on Potato Tart), BBQ Unagi on Sare Roti, and Obsiblue Prawn with Sambal Hitam and Leek Floss.

The Tuna with Ginger Kerabu Dressing and Caviar presented a ceviche-like tuna dish, providing a refreshing start to the culinary journey.
Seroja Singapore - One Michelin Restaurant- Roti Paung
An exceptional highlight was the Roti Paung, a Terengganu-style bread that was steamed and deep-fried, boasting a soft, pillowy texture with a slightly crispy golden-brown layer. Its inherent buttery flavor made it an irresistible choice not to stop at the first slice.

Jasmine Tea Duck Broth
Seroja Singapore - One Michelin Restaurant- Jasmine Tea Duck Broth
Right before the main course, you get a strong fragrance of the jasmine tea at the onset, though after a sip of the broth, it was the fragrant duck broth taste which dominated the palate.Interesting!

Percik/ Traders Rice| Lauk Pauk
Seroja Singapore - One Michelin Restaurant- Lamb Percik
For the main course, I opted for the Lamb Percik, served with heirloom rice aged for two years and accompanied by side dishes such as salad and sambal. The recommendation was to enjoy the tender lamb meat by combining it with the rice and sambal for an exquisite flavor experience.

The first part of dessert is Tropical Herbs in bandung flavour. Refreshing taste and a bit sweet for me. It is like a palate cleanser.

A traditional Malay pastry dessert baked to perfection in a brass gold pan.

Seroja offers a distinctive take on Malayan cuisine within a fine-dining setting, setting it apart from other establishments in the same category. The well-executed dishes showcase a variety of ingredients from the Southeast Asia region. While the restaurant encourages wine pairing, the food itself is flavorful enough to be enjoyed independently.
