[SG EATS] Niigata City Food Fair Is Back To Tong Le Private Dining
It’s the time of the year again! After a successful collaboration last year, Niigata City is back to pair with Tong Le Private Dining for Japan’s ‘City of Water’ dining experience.
Home to one of the richest varieties of seafood, Chef Ken Ling and the team from Tong Le Private Dining paid a visit to Niigata City and has brought flavours of Niigata city to you.
Stating off with the Sazae (海螺), an ice crystal dish filled with Turban Shells. The flavourful shells are chewy yet crunchy. Freeze along with fresh flower petals and paired with fresh seaweed jelly, this dish is a great way to start off your journey to Niigata City.
Next up, it’s the Maitake Mushroom, Nameko Mushroom, Tomato. It is served in an imperial looking pot-bowl, the soup also contained seafood for the Royals. Despite of having several slices of seafood in the soup, hats off to Chef Ken and team for maintaining the taste of the tomato soup. It’s a rich savoury balance between the seafood and tomato. Remember to pop the tomato in your mouths first! Fun fact, the Nameko mushroom is believed to increase prevention against infections, drinking this could increase your royal health!
The next thing that got me hooked is the Medai (sea bream). It is an oven-baked Japanese butterfish dish topped with turmeric. This may seem like a local hawker dish, but what stood out were the crispiness of the skin and the texture of the fish. The freshness of the fish when matched with the turmeric paste, it’s a match in heaven. This is one of the personal favourite dishes so far.
This dish hardly needs any introduction, it’s the Kurobuta or often known as Kobe pork. Kobe pork is known as the highest quality pork worldwide due to its rich marbling and tenderness, this dish lived up to the pork’s reputation. It is served with three different pairing sauces, namely the garnished garlic, soy sauce and sea salt. I liked the dish on its own without any other pairing sauces.
Uonuma Rice, the only dish with rice on the menu, did not disappoint either. It is served dry, the waiter will come by and pour in the soup right in front of your eyes. This dish is also served with a fried scallop, eat the scallops first to prevent the scallop from being soggy. The scallop was chewy but a little bit too salty for my liking. What’s interesting about this dish was the rice, the rice is sweet yet nutty with a slight stickiness. A simple yet flavourful dish.
Much rave has been going on with fruits from Niigata city, especially the ‘Niitaka-nashi’ Pear, ‘Okesa-gake’ Persimmon. With autumn packing up soon, this is the time to enjoy this dessert. Alongside with the baked tart and jelly, taste the white pear first before trying the red pear. It is recommended to eat the dish from right to left.
