[SG EATS] 8 Dishes of DouTou Clams To Try in Putien
DouTou Clams season is back again! Putien is serving DouTou Clams from now up to 10th August 2018. Diners can enjoy a combination of any 2 different types of DouTou Clam dishes (small portion) at S$38.80. This promotion is valid at all Putien’s outlets.I was invited to Putien recently to try out Putian DouTou Clam, which is freshly air-flown from the coastal town of Putian. We learnt that DouTou Clams are named after a village in coastal city of Putian where villages have been breeding clams for generations, dating back to 600 years ago. Oh boy! What a long way of history! DouTou nutrient-rich black mud is pure with no sand particles. It is nourished by a combination of minerals, organic matter and brine algae in black mud, the clams can grow up to 6cm oin length and are distinctively fleshy and succulent in texture.
Enough story about DouTou Clams. Let’s move on to the 8 different ways to savour DouTou Clams:
1. Chilled DUOTOU Clam in Fermented Wine S$22.80++>
The clams are marinated in fermented wine and chilled for at least 2 days to absorb the mellow and sweet scent before they are served onto a plate with chunky pieces of celery. The cooking process leaves you with a really nice flavour.
2. Deep-fried DUOTOU Clam S$22.80++ (S) | S$31.80++ (M)
First time trying deep-fried clam and it was deep-fried till golden brown and presented onto a plate of shredded white lettuce and garnished with fresh wild rocket leaves. It gives the crispy outer layer and firm juicy texture in the inside of the clam.
3. Baked DUOTOU Clam on Hot Plate S$19.80 (S) | S$29.80(M)
It was said to be the bestselling dish lined neatly onto a bed of sea salt and served on a hot plate. Nothing facing from the appearance but it has the homely flavour by a dipping onto the slab of seasalt before savouring it.
4. Stir-fried DUOTOU Clam with Ginger & Spring Onion S$19.80(S) | S$29.80(M)
Home-styled cooked fish which is perfectly go with a bowl of steamed rice.
5. Steamed DUOTOU Clam with Minced Garlic S$19.80(S) | S$29.80(M)
Another comfort dish to order when you are dining here is the lightly steamed half-shelled clams topped with minced garlic and spring onions. The garlicky and tender clams certainly make everything taste better.
6. Steamed DUOTOU Clam with Wine S$19.80(S) | S$29.80(M)
This is steamed using traditional Chinese wine, Huadiao. The sweetness of the clams is gently infused into the alcoholic broth, packing the bowl with a heady aroma. It gives more intense flavour to the dish. I think this is something our parents or grandparents will love it.
7. DUOTOU Clam Soup with Tofu Meatballs S$19.80(S) | S$29.80(M)
The clams are boiled together with an assortment of cauliflowers, snow peas and tofu meatballs to complement and enhance the clam’s natural sweetness. The tofu meatballs are traditionally and laboriously transformed from silky smooth soybean to delectable and meaty meatballs.
8. DUOTOU Clam Omelette S$19.80(S) | S$29.80(M)
Eggs and clam reminds me of oyster omelette though. This will be your next dish to order along with other dishes in Putien. Complete it with a bowl of steamed rice.
The clams here are firm and chewy texture. I am glad to learn about the delicate process from harvesting, preparing and serving to customers during my session with Putien. It was enriching and learned to appreciate the effort behind all dishes.
