[SG EATS] Michelin-Starred Jiang-Nan Chun At Four Seasons Hotel Singapore – Six- Course Summer Seasonal Menu
Back to Michelin-starred Cantonese restaurant Jiang-Nan Chun at Four Seasons Hotel Singapore for their six-course Summer Menu this season. This seasonal menu is designed by Executive Chinese Chef Tim Lam that is intended to nourish and aid wellness during the warm season, and each dish is thoughtfully crafted to relieve, rebalance and reenergise.
This summer menu is available from 17 June to 31 August 2019 for both lunch and dinner daily. As for the pricing, the menu is priced at S$158.00++ per person.
Deep-Fried Cod Fillet and Chilled Sliced Whole Abalone
We started off with deep fried to golden brown cod fillet with sweet rose wine sauce and chilled sliced whole abalone. I enjoyed the plump and juicy chilled abalone with a nice soft and firm texture bite.
Double-boiled Pork Shoulder Soup with Cordyceps Flower and Figs
Next is the double-boiled soup with fruity fragrance in it. The pork shoulder meat is slow-cooked and that explains the soft and tender consistency. And this is my first time having figs this way and it is best to have it during summer as it improve digestion, clear heat and open up palate for the meal. It also helps to remove toxicity and resolve swelling.
Steamed Crab Claw with Egg White and Chinese Wine
Steamed crab claw with egg white and 15 years old of Chinese wine are a perfect combo. Chef uses Sri Lanka crab for this dish and it tasted ‘shiok’ with the Chinese wine and egg white. I wish I can have second serving for this.
Cabbage Roll with Winter Melon, Kombu Seaweed and Mushrooms
Delicate serving of cabbage roll with winter melon, kombu seaweed from Japan and mushrooms all in a roll. It is light in flavour and perfect to welcome the next dish.
Braised Flat Noodles
Braised flat noodles with pork collar to end the savoury course. Slightly spongy texture noodles with tender pork collar.
Chilled Coconut Pudding with Bird’s Nest
As for dessert, we have this nourishing Chilled Choconut Pudding with Bird’s Nest. Fresh coconut pudding served in a coconut husk and topped with bird’s nest for such a luxurious sweet note.
