This is one of my favourite yusheng I enjoyed the most so far. This year, Group Executive Chef Foo’s ‘yusheng’ creation puts the spotlight on wholesome ingredients and house-made elements to achieve a light and uplifting taste. It comprises a thoughtful combination of textures and flavours, homemade pickled items including marinated plum tomatoes, pickled cucumber, juicy pomelo segments, fresh ice plant, fresh lily bulbs, kaffir lime leaves, red dates, and walnuts among others. The best part is the succulent local lobster and ikura, or salmon roe with an olive oil-based dressing with flower blossom syrup, plum sauce and sesame seeds.

Double-boiled abalone with conpoy, sea cucumber and fish maw soup served in a teapot S$24.80++ per person
Available at Crystal Jade JiangNan
Nourishing tasty soup served in an exquisite set of teapot and cup concept.

Hakka Yam Abacus Seeds with Boston Lobster S$15.00++ per 100g
Available at Crystal Jade Palace
Traditional dish with homemade Hakka yam abacus seeds expertly stir-fried over high heat with dried shrimp, shiitake mushrooms, black moss ‘fa cai’ and Boston Lobster. I called it the ‘atas’ suan pan zi. I would highly recommend trying this flavourful dish.

Braised cod fish sphere in golden thick soup with Iberico Ham S$28.00++ per person
Available at Crystal Jade Pavilion
The soup has rich symphony of textures and taste with juicy and moist classic ‘lion head’ meatball cod fish. The dish is finished off with nutty and aromatic flavour of Iberico Ham.

Crispy herbal ‘dang gui’ duck S$38.00++ for half | S$68.00++ for whole
Available at Crystal Jade Pavilion
All time favourite rich roast flavour and crispy skin duck from Crystal Jade. The duck is served in an aromatic herbal sauce infused with the unmistakeable bittersweet notes of Angelica root and dried longan, while wolfberries add little bursts of sweetness.
