Caviar located at basement of Palais Renaissance is Singapore’s first caviar-based restaurant showcasing a multitude of different types of caviar from top caviar houses around the globe. The modern European fine dining restaurant features the finest caviar from France, Italy, Russia, Uruguay, Japan, China and the Iranian Caspian Sea (pending seasonal availability). With an intimate 28-seater space, Caviar, is really about passion.

The restaurant offers lunch, dinner and Sunday brunch menu featuring seasonal flavours in tandem with high-end beverages and the world’s best varieties of caviar.

I had the opportunity to try out their 4-course Lunch Menu priced at S$128.00++ recently. This Spring Menu is available from now till end June 2022.
Starting off with Amuse Bouche- Corn Manchego Croquette atop Uni and Giaveri White Sturgeon. Aesthetically beautiful presentation with fried deliciously corn croquette atop with bafun uni and striking black roe. One mouth and it explodes into a creamy pool of melt-into-your mouth flavours.

Next, Norweigian Trout served with abalone, ginger vinegar, and artic char roe. I enjoyed this light and refreshing luxurious elements in this dish.

Then, we had the Organic Egg (steamed egg custard) served with slices of chrozio and in the middle is the glossy black pearl, Glaverie White Sturgeon and edible flowers. The chorizo’s flavour tends to be milder than pepperoni and has the hints of smokiness to enhance the flavours of this dish and of course the caviar for whole gastronomic affair.

We also had nicely grilled Poulet atop with Royal Oscietra served with sunchoke and kohlrabi puree. The Royal Oscietra exhibits rich, creamy notes and poppy texture along with the soft, creamy, pale interior sunchoke and kohlrabi purees that tasted rich and delicious. All elements complement well and spot-on.

Lastly, we had the Coconut with strawberries sorbets and top with lime zest beautifully presented on our table.

Not forgetting the Petit Four to end the perfect lunch date.

Indulge in some champagne to wash it down and complete the gastronomy meal. They have extensive drinks list including selection by the glass too. Overall, it is quite an experience learning about the delicate differences on sturgeon roe. The presentation and detailing on the presentation as well as the taste of the dishes are well-thought and executed giving the guests a top dollar for the experience.
