[SG EATS] Jumbo Signatures @ Marina Bay Sands- Jumbo Premium Flagship Restaurant
JUMBO Signatures located at Marina Bay Sands is JUMBO Group’s first premium restaurant concept. This premium flagship features Singapore’s iconic flavours from JUMBO Group’s multiple dining concepts. From the ubiquitous Bak Kut Teh stewed to perfection by NG AH SIO Bak Kut Teh, the succulent and flavoursome Braised Whole Abalone with Premium Sauce by Zui Teochew Cuisine to the tantalising Award-Winning Chilli Crab by JUMBO Seafood, the new flagship premium restaurant combines these quintessential tastes, and elevates the Singapore dining experience through tasting menus and sommelier wine pairing.
The restaurant offers 3-course set lunch starting from S$58.00++ and 8-course tasting menu from S$158.00++ , allowing for flexible customization. Add on S$118.00++ for wine pairing to complete the experience. We got the chance to dine-in with wine pairing recently and here are the dishes we tried:
First up, Amuse Bouche for dine-in customers.
Next, we had Appetizer.
Shelled Prawn with Seaweed and Pork Floss
Scallop wrapped in Thai Yam Ring
Australian Lobster coated in sesame dressing. I personally thought the dressing is overwhelming considering the crustacean itself is fresh and sweetness.
For soup course, we had Collagen Soup with Fish Maw and Bamboo Pith. Nourishing, thick soup boiled with mixture of chicken bone, pork skin and fat for over 6 hours and served with chunks of fish maw.
The menu offers 5 choices of mains and I opted for Chilli Mud Crab Pincer, which is JUMBO’s famous dish. Other mains include A4 Wagyu Steak, Cod Fish Steamed with Preserved Radish and Diced Chili or Crispy Fried Cucumber with Abalone Sauce and Black Pepper Lamb Chop with Foie Gras. The chili crab sauce is made with a blend of over 10 Southeast Asian spices and it truly an iconic dish for the past 30 years. Enjoy with the mantou and the crab meat for the full experience.
Then, we had the Sliced Luffa Melon in Collagen Soup. This vegetable dish is served with collagen-based soup and the luffa melon is hand-sliced into thin noodles. I enjoyed it especially with the fried shredded conpoy, Sakura ebi and fried shredded “Jinhua” ham. Splendid!
Paofan lovers can go for Signature Fragrant Rice in Rich Seafood Broth (supplement S$38.00++). It is served in a hot stone pot and sizzling hot as the service staff pour the luscious seafood broth over.
They also serve ‘Yuan Yang’ Fried Rice with Cod Fish and Fresh Mushroom or Sliced Abalone with Udon in their menu.
Lastly, we ended our dinner with a sweet note. That’s the luxurious Cheng Tng with Bird’s Nest and Peach Gum.
Unlike other JUMBO restaurants, this outlet offers premium ingredients and different dining experience. It is ideal for target customers like business associates. They also have private rooms to cater for privacy dining or celebration.
