[SG EATS] SHINJI BY KANESAKA | RAFFLES HOTEL

This unplanned lunch turned out to be the best Japanese cuisine I had up to date. My friend was in town last Friday and we were supposed to meet at Shibuya but he somehow ended at Shinji instead. So, we had a luxurious lunch session at Shinji by Kanesaka. This is the extension of 2-star Michelin Chef Shinji Kanesaka’s Edo-style sushi restaurant that first set up in Tokyo’s exclusive Ginza district. Lunch sets are range from S$75.00- S$250.00. We ordered Hana Set S$75.00 (9pcs of sushi).Let me take you to the lunch entourage from here:
Starter to kick start the meal.
Left: Red Snapper was fresh and smooth
Right: Anago topped with Yuzu sprinkle and a brush of sweet sauce.
Left:Ika (Squid) sushi turned out to be ideal with the right chewy texture. It is easily breaks off when you bite it.

Right: Chutoro (blue fin tuna) nicely presented on the plate. The glowing layer after a brush of shoyu on top of the chutoro enhances the appearance. Mega love the fats that literally melted into my mouth with the sushi rice.Left: Aji (Horse Mackerel) with finely chopped spring onions and tuna chunks.

Right: Grilled Tiger Prawn has the sweet elements and the meat is firmly attached to the sushi rice. The chef cut half for me so that I can maintain the feminine eating.Left:Otoro (Tuna belly) gives smooth slid to the throat with the fats in it.

Right: Maguro Zuke (Marinated Tuna) (If i remember correctly) Simply soy marinated maguro and the freshness of the sashimi does the wonder.Left: The last sushi course is the Tekka Maki (Tuna) along with the tamago which has the sweet taste in it. The gunkan wrapped with the nori was still crispy when it served.Asari (clam) clear soup was served hot and refreshing. I can taste the sweetness of the clams in the soup broth. Didn’t managed to capture the mini clams as I was rushing for time.

The meal is completed with dessert but I missed it. I couldn’t wait any longer and decided to give up on it and headed back to office. Thus, do take note that if you are planning to dine in, be prepared to have an estimate 2 hours lunch time so that you can enjoy comfortably.

The service staffs here were polite and friendly. They are attentive to customers’ needs to ensure the customers enjoyed the meal throughout the session. Total bill for 2 pax S$176.55 inclusive of 10% service charge and 7% GST.
