Want to experience a guilt-free afternoon tea session? Check out the Afternoon Wellness Tea Time at Chef’s Table, Capella Singapore on Fridays from 3-5pm only. The specially curate menu featuring an array of gluten-free and dairy free sweet and savoury creations is conceptualized by Chef Sandra Lim of Live Fruitfully and Chef David Senia, the Culinary Director of Capella Singapore.
Thanks to the lovely ladies from Capella, I have the opportunity to experience the Wellness Tea Time experience recently.
Here are the highlights from the 5- course Wellness Tea Time menu.
This includes Cauliflower Millefeuille with shiitake ‘bacon’ and Tempeh Portobello Slider with green goddess cream from the savoury selection. We were quite amazed the ingredients used to prepare every single item and the efforts in it.
The Sprouted Whole Grain Bread with Tomato Tapenade served is made from 5 different grains and it was crunchy and airy texture. The sweetness of the tomato tapenade completes the flavour of the bread.
The Crispy Charcoal Tule with sweet Potato Hummus tasted light, healthy and yet the sweet potato gives the sweetness note to it.
Desserts include Quinoa and Zucchini Chocolate Tea Cake, Cultivated Blueberry ‘cheesecake’ with beetroot glaze, Scones with raspberries and chia seeds jam and cream prepared with whipped coconut milk, crunchy Chocolate Hazelnut Dome and Cacao Avocado mousse. The desserts are prepared with unrefined sugar and we were all amazed with the creations.
And special mention is the scones served are made without eggs and butter. How would it be possible? Chef Sandra made it possible here using almond flour and coconut flour in it. Oh boy! It tasted delish with the whipped coconut cream and the jam.
There is a selection of Ronnefeldt Ayurvedic teas to complete your afternoon tea. The tea selection includes Stay in Balance, Light My Flame and Let It Go. It is just perfect after a good spa therapy. Hop over to Chef’s Table for this vegan tea indulgence.
We ended the tea indulgence with a refreshing Tomato consommé jelly with basil granita.
