Here is the 3- Course Menu:
Home-smoked Trout in Thai lime and Granny Smith Apple X The Auchentoshan 12 Year-old Single Malt
Whisky Pairing-Porta Clark Quay
The whisky adored for its caramel, sweet, toasted oak and citrus flavour notes pairs well with the smoked trout in Thai lime and Granny Smith apple. The zesty elements enhanced the notes of whisky flavours. I enjoyed this first course dish.

Dish of the Forest X The Auchentoshan 18 Year-old Single Malt
Whisky Pairing-Porta Clark Quay-Pigeon
Next, the Auchentoshan 18 year-old Single Malt adored for its oak, caramel, vanilla and nutty flavour notes. This is just perfect to go with the Sous-vide tender pigeon, with earthy beet and grainy quinoa. The sous-vide pigeon has a strong livery taste and the whisky flavour is perfect marriage. If pigeon is not your preferred dish, you can opt for pork dish instead.

Home-baked thyme cookie with blackberry compote, fresh whole blackberries and aged balsamic X The Auchentoshan Three Wood Single Malt
Whisky Pairing-Porta Clark Quay-Dessert
The Three Wood Single Malt is matured in 3 different casks from American bourbon to Spanish Oloroso Sherry and finally Pedro Ximenez Sherry caks. I still can taste the oakiness of the whisky without it being masked by the sweetness of the dessert.
It is interesting to learn about whisky pairing and each characteristics of each style of the whisky throughout the 3-course tasting session. Mark your calendar and come explore the wonderful and diverse knowledge about whisky pairing.
