Tiong Bahru Bakery, Singapore proud local French bakery has recently launched Tiong Bahru Bakery Diner. It is an all-day extension at its Funan Mall and Raffles City outlets. With the new chef de cuisine, Paul Albert on board, the debut menu showcases his past and present culinary. Almost every element of the dishes is made from scratch and using wild fermentation techniques that span from days to months. Vegan and vegetarians have more options here as the menu comprises plant-based dishes.
Here are the highlights from the tasting menu.
Chayote Kimchi and Mung Bean Salad S$18.00++
Starter dish includes mung beans, crispy buckwheat, chayote and turnip kimchi and green parsley oil topped with watercress, pea shoots and a smattering of toasted peanuts. This is a salad for vegan and vegetarians.
Hot Chicken Salad & Caramelised Pumpkin S$20.00++Juicy, slow-cooked chicken breast served with kabocha pumpkin confit and herb pomelo salad. It is complete with a wicked wasabi dressing although I think the wasabi dressing can be stronger.
Super Green Warm Soup S$16.00++Local greens soup that combines Chinese spinach, bok choy, shanghai green, chye sim and lady’s finger with a dollop of beetroot pickled ricotta topped with toasted candle nuts, sautéed shimeji and green herb oil. I would recommend ordering this comforting soup that packed full of green vegetables. Healthy soup indeed!
Miso Whole Wheat Spaghetti with Broccolini S$19.00++Whole wheat spaghetti with basil and almond pesto, broccolini, miso eggplant confit and finely grated grana padano cheese something that I would order for my next visit. The whole wheat spaghetti has higher nutrients and the ingredients to accompany it enhance the flavour to the dish.
Pulled Pork Creamy Risoni Pasta S$22.00++One of my favourite of the night is this creamy cooked al-dente risoni with pulled pork and roasted king oyster muchroom topped with watercress and enoki mushrooms.
Portobello, Avocado & Hummus Black Sandwich S$19.00++Toasted charcoal bread filled with roasted Portobello mushrooms, avocado, dhal hummus, shredded pickles and fresh herbs served with purple potatoes chips.
100% Sourdough Waffle-Savoury S$23.00++Instead of the usual waffles, Tiong Bahru Bakery Diner offers waffle with a sourdough twist served savoury style that includes the fried egg with crisp grilled bacon, lashings of their special maple syrup, goji berries and ricotta cheese.
Fluffy Brown Butter Pancake- Sweet S$21.00++We ended our dinner with a sweet note. Superlight and fluffly pancakes served sweet style with Ripe Thai mango, lemongrass Chantilly and caramelized almonds with a generous drizzle of salted butter caramel sauce. It is best for sharing after the mains.
