60-inch Garden of Abundance Yu Sheng
First up, showcasing the new luxurious 60-inch Garden of Abundance Yu Sheng complemented with baby abalone, Canadian lobster, sea urchin, ikura, Hokkaido scallops, salmon, crispy fish skin, pomegranate sauce, shallot oil and shaped in the Chinese Idiom ‘五谷丰收’, to symbolise the abundant harvest of all food crops, for a prosperous year ahead.

Next, we had Abundance Pri-Fixe Menu S$328.00++ per guest that showcase of seven different masterfully crafted dishes.
Full of abundance yusheng that consists of Hokkaido scallop, sea urchin, Kaluga caviar, salmon and condiments, pomegranate dressing. It is served individually, and guest get to hands-on with the individually plated yusheng.
Nourishing double-boiled giant fish broth with bird’s nest, king tuber mushroom, Yunnan cured meat, fish maw in coconut husk. Richness in premium ingredients and with the double-boiled technique, it is said to achieve the maximum extraction of flavour with little compromise to the flavour or texture.
Roasted-smoked duck with ‘Ban Zhang’ tea leaves, broccolini. Tea-smoked duck is a classic Chinese dish and chef uses ‘Ban Zhang’ tea leaves that has a unique bitter-and-sweet taste, which is very strong, but leaves a balanced and long-lasting sensation in the mouth and throat. The end results were amazing. Succulent meat lies beneath light and crispy skin. The aroma from the tea leaves absorbs well into the duck. Thumbs up!
Instead of the Braised three-head abalone, we had the Abundance Treasure Pot (Pen Cai) S$498 brimming with over 18 premium choice ingredients. Ingredients include braised yellow jade sea cucumber, eight-head whole abalone, Canadian lobster, Hokkaido scallops, prawns, fish maw, goose web, pig trotters, sea whelk, oysters, chicken wings, preserved meat sausage, liver sausage, Yunnan king tuber mushroom, cabbage, wheat gluten, fried yam and fatt choy. This is available for takeaway to enjoy the celebrations at home.
