This curated menu is available from now till 30 November 2020. Executive Chef Chan Shun Wong has worked closely with ZENXIN Agri-Organic Food to curate well-balance taste of each ingredients at their best. The set menus start from S$68.00 per pax, with different menus available each month and is inclusive of a fully vegetarian menu. So this partnership with Si Chuan Dou Hua, they have specially grown some of the ingredients exclusive use at the restaurant. These ingredients include the Cabbage as well as Mustard Green Flowers.
Highlights from the menu includes:
Chilled Organic Mustard Green with Mustard Sauce and Honey Sauce
Slices of boiled mustard greens served atop crushed ice alongside mustard green flowers and two separate dips- mustard sauce and honey for pairing taste. I would say this is quite refreshing and new to me especially the mustard green flowers that are not available in the market and specially grown for use at the restaurant. The yellow flower has the exhilarating notes akin to of wasabi. The honey dipping is a good choice to balance off the bitterness from the vegetable while the mustard sauce to give in-depth flavour to your tastebud.
48 Hours Braised Wagyu Beef with Organic Wolfberries and Organic Spinach
This is so good with fork tender wagyu beef and savoury and green taste of spinach. I liked it how the beef does not overpowering taste that covers up the spinach.
Stir-Fried Organic Cabbage with Sliced Beef and Dried Chilli or
Stir-Fried Organic Cabbage with Sakura Shrimp
Perfectly stir-fried organic cabbage with the crispy, crunchy texture that i secretly wished for second servings. The cabbage used here are perfectly ripened organic cabbages grown on one of the highest points on Cameron Highlands. Grown for more than a hundred days, which is half a month more than the average cabbage, there is a higher level of moisture in this cabbage. Thus, this explains the natural sweetness of the cabbage is significant in this plate of goodness.
Assam Organic Mustard greens with Roast Pork and Dried Chilli
Vegetables cooked till soft and the roast pork makes a good combination along with the tanginess, spicy and slightly sweet assam gravy.
Braised Rice with Red Quinoa and Black Truffle
Truffle lovers can enjoy this braied rice that infused with truffle and it is a perfect marriage. Definitely a comfort bowl of rice not to miss.
Homemade Fine Beancurd with Organic Sweet Potato
Also, do not miss the signature dessert that turns to a beautiful purple in the “Soul Organic” menus with natural dye of purple sweet potatoes. To extract the vibrant purple colour, slices of sweet potatoes are boiled together with the soy bean milk for at least an hour. The beancurd will be prepared in front of the diners at the start of the meal and served at the end of the meal. It is like watching a “magic” show where the liquid turned into beancurd after 25minutes.
