When I received an invitation from JEN Singapore Orchardgateway by Shangri-La to experience Masterchef Experience at Makan@JEN, I immediately replied with a YES! For the first time, diners get to experience specially curated menu by Masterchef Singapore Season 2 Winner, Chef Derek Cheong showcasing his stellar signatures from Twelve Flavours. This collaboration is only available from 15 June to 11 September 2022, or else you need to be in his private dining long waitlist. #dontsayinevershare
The price starts from S$58.00++ for 3-course lunch onwards and up to 6-course Wine Pairing Set Dinner at S$208.00++. We were lucky to try out the 6-course Wine Pairing Dinner the other night.Twelve flavours x makan jen-brioche bread
Twelve flavours x makan jen-Amuse bouche
Starting off with brioche bread with miso butter and amuse bouche.The soft, fluffy brioche bread and miso butter combination.
Twelve flavours x makan jen-Chawanmushi
Next, we had the Chawanmushi. Delicate and savory classic Japanese steamed egg custard served in a teacup with crab ikura, yuzu ponzu and hints of wasabi flavours.
Recommended to pair with 2019 Frederic Brouca, “Champ Pentus” Blanc, Faugeres, France
Twelve flavours x makan jen-Hokkaido Scallop
Hokkaido Scallop with ramson, fave bean, asparagus and kailan puree. Thick and pan-seared scallop goes well with the earthy, creamy nutty from the greens.
Recommended to pair with 2020 Das Juice, Rose, Victoria, Australia
Moving on is the Black Cod with razor clams, sake lees and beurre blanc. The creamy sauce hits with tangy brightness of the wine and vinegar and adds complexity flavours to the rich and buttery black cod.




Twelve flavours x makan jen-Pork Jowl
Pork Jowl glazed with umami flavoured miso served with apple and cabbage.
Recommended to pair with 2020BK Wines, Carbonic Pinot Noir, Adelaide Hills, South Australia.
Twelve flavours x makan jen-Apple
Before moving on to dessert, we had Apple-Shiso, Pine , kiwi for palate cleanser.
Twelve flavours x makan jen-Dessert
As for dessert, we had Roasted Banana-chocolate, peanut, coffee paired with Graham’s 10 years Tawny Port, Duoro, Portugal for the sweet endings.
Twelve flavours x makan jen-Petite Four
Lastly, we had Petite Fours and choice of freshly brewed coffee or tea.
