Festive Tropicana Log Cake

Inspired by Christmas in the tropics, this seemingly traditional chocolate log cake will unravel layers of surprises. The invigorating pineapple-vanilla confit with pineapple chunks add a refreshing, citrusy touch while the subtlety of the sea salt caramel mousse plays off the rich Valrhona chocolate mousse and sponge perfectly. The creation sits atop a crisp base of hazelnut croustillant.

Jolly Holiday Travel Cake

Reminiscent of the classic butter cake, this enticing creation features a mixture of light pistachio buttercream and mandarin orange confit between layers of dense pistachio cake and studded with dried apricots. Encased in pistachio white chocolate ganache, it is adorned with white chocolate Christmas tree toppers and a flourish of gold flakes. This is apparently one of the popular favourites during the Christmas preview.
